Capri-Style Spaghetti

A light tomato sauce that’s coated with oozing mozzarella is a fantastic summertime dish. To make it authentic, stick with fresh Buffalo mozzarella instead of shredded cheese.

Ingredients

  

  • 1 (16 ounce) package spaghetti
  • 3 tablespoon(s) olive oil
  • 1 garlic clove, minced
  • 1/8 teaspoon(s) red pepper flakes, crushed
  • 6 plum tomatoes, chopped
  • 1 teaspoon(s) salt
  • 1/8 teaspoon(s) fresh ground black pepper
  • 1 1/2 cup(s) fresh mozzarella cheese, cubed

Instructions

 

  • Bring a large pot of water to a boil.
  • Heat oil in skillet over medium heat.
  • Add garlic and red pepper flakes; stir for 1 to 2 minutes.
  • Add tomatoes and seasoning; reduce heat to low.
  • Cook for 5 minutes, stirring occasionally.
  • Cook pasta according to package directions; drain and return to pot.
  • Add hot pasta to skillet mixture.
  • Add cheese; stir until slightly melted.
  • Transfer to serving platter.
  • Ready in 20 min 10 min prep.
