Capri-Style Spaghetti
A light tomato sauce that's coated with oozing mozzarella is a fantastic summertime dish. To make it authentic, stick with fresh Buffalo mozzarella instead of shredded cheese.

- 1 (16 ounce) package spaghetti
- 3 tablespoon(s) olive oil
- 1 garlic clove, minced
- 1/8 teaspoon(s) red pepper flakes, crushed
- 6 plum tomatoes, chopped
- 1 teaspoon(s) salt
- 1/8 teaspoon(s) fresh ground black pepper
- 1 1/2 cup(s) fresh mozzarella cheese, cubed
Bring a large pot of water to a boil.
Heat oil in skillet over medium heat.
Add garlic and red pepper flakes; stir for 1 to 2 minutes.
Add tomatoes and seasoning; reduce heat to low.
Cook for 5 minutes, stirring occasionally.
Cook pasta according to package directions; drain and return to pot.
Add hot pasta to skillet mixture.
Add cheese; stir until slightly melted.
Transfer to serving platter.
