Potato-Nested Eggs

This is a very versatile dish that can be served as a dinner or a brunch. Kids love finding the nested eggs!

Ingredients

  

  • 32 ounce(s) potatoes, cooked
  • 1 cup(s) milk
  • 1 1/2 cup(s) grated hard cheese
  • 6 eggs
  • 2 2/3 tablespoon(s) margarine, melted
  • 1 dash(es) Sea salt
  • 1 dash(es) Freshly ground black pepper

Instructions

 

  • Preheat oven to 425 degrees.
  • Mash potatoes with milk and margarine.
  • Oil the sides and bottom of a 10 inch baking dish and sprinkle bottom with 1/3 of the cheese.
  • Add mashed potatoes and spread evenly.
  • Make six holes in the potatoes and crack an egg into each hole.
  • Pour a little melted margarine over each egg, then sprinkle the top with the remaining cheese and some salt and pepper.
  • Bake for 10 minutes.
