Potato-Nested Eggs
This is a very versatile dish that can be served as a dinner or a brunch. Kids love finding the nested eggs!

- 32 ounce(s) potatoes, cooked
- 1 cup(s) milk
- 1 1/2 cup(s) grated hard cheese
- 6 eggs
- 2 2/3 tablespoon(s) margarine, melted
- 1 dash(es) Sea salt
- 1 dash(es) Freshly ground black pepper
Preheat oven to 425 degrees.
Mash potatoes with milk and margarine.
Oil the sides and bottom of a 10 inch baking dish and sprinkle bottom with 1/3 of the cheese.
Add mashed potatoes and spread evenly.
Make six holes in the potatoes and crack an egg into each hole.
Pour a little melted margarine over each egg, then sprinkle the top with the remaining cheese and some salt and pepper.
Bake for 10 minutes.
