Jeremy’s Homemade Jamaican Jerk

Ingredients

  

  • 3 green onions, peeled and finely chopped.
  • 3 cloves peeled garlic
  • 1/2 teaspoon(s) ground cinnamon
  • 1/2 teaspoon(s) salt
  • 1 1/2 teaspoon(s) (1 tbsp.) ground allspice (pimento berries)
  • 1/2 teaspoon(s) fresh grated nutmeg
  • 1/2 teaspoon(s) ground black peppercorns
  • 1 small red chili, ground
  • 1 tablespoon(s) olive oil
  • 6 loin pork chops

Instructions

 

  • Combine the onion, garlic and salt in a food processor to make a paste.
  • Add the rest of the spices.
  • Smear on pork and marinate overnight.
  • Brush the pork with a little more oil and grill over hot coals in a covered barbecue for five to ten minutes until just cooked through.
