Herbed Cornmeal Blini

Ingredients

  

  • 1/2 cup(s) cornmeal
  • 1/2 cup(s) all purpose flour
  • 2 teaspoon(s) baking powder
  • 1/4 teaspoon(s) baking soda
  • 1 teaspoon(s) kosher salt
  • 1 tablespoon(s) unsalted butter, melted
  • 1/2 cup(s) milk
  • 1 tablespoon(s) maple syrup (or honey)
  • 2 floz water
  • 1 teaspoon(s) rice wine vinegar
  • 3 tablespoon(s) parsley or chive, chopped fine

Instructions

 

  • Sift all dry ingredients in a mixing bowl.
  • In another bowl beat together butter, milk, maple syrup, water and rice wine vinegar.
  • Combine wet and dry ingredients.
  • Stir in parsley or chive, or both.
  • Heat non-stick saute pan; add a scant amount of vegetable oil to pan.
  • When oil is hot, drop silver dollar-size spoonfuls of batter into pan.
  • Cook on each side about one minute.
