Herbed Cornmeal Blini

- 1/2 cup(s) cornmeal
- 1/2 cup(s) all purpose flour
- 2 teaspoon(s) baking powder
- 1/4 teaspoon(s) baking soda
- 1 teaspoon(s) kosher salt
- 1 tablespoon(s) unsalted butter, melted
- 1/2 cup(s) milk
- 1 tablespoon(s) maple syrup (or honey)
- 2 floz water
- 1 teaspoon(s) rice wine vinegar
- 3 tablespoon(s) parsley or chive, chopped fine
Sift all dry ingredients in a mixing bowl.
In another bowl beat together butter, milk, maple syrup, water and rice wine vinegar.
Combine wet and dry ingredients.
Stir in parsley or chive, or both.
Heat non-stick saute pan; add a scant amount of vegetable oil to pan.
When oil is hot, drop silver dollar-size spoonfuls of batter into pan.
Cook on each side about one minute.
