Mexican Rice
Spice up your sides with this healthy, hearty rice dish that’s full of vegetables and cooked in a rich broth and tomato mixture with smoky notes of cumin.
Ingredients
- 1 cup(s) long-grain white rice
- 2 cup(s) chicken broth
- 1 tablespoon(s) olive oil
- 2 cup(s) frozen vegetables
- 1 cup(s) tomato sauce
- 1 dash(es) salt, to taste
- 1 dash(es) black pepper, to taste
- 1/8 teaspoon(s) cumin
Instructions

Heat oil on medium in a large sauce pan.

Add the rice and toast slightly, turning it frequently, to make sure it doesn’t burn.

Once it’s started changing color and expanding, add the chicken broth, tomato sauce, and veggies.

Mix ingredients together, then add salt, black pepper, and cumin.

Reduce heat to medium low and cover sauce pan with aluminum foil or lid.

Let cook 20 minutes, stirring occasionally.
