Mexican Rice

Spice up your sides with this healthy, hearty rice dish that's full of vegetables and cooked in a rich broth and tomato mixture with smoky notes of cumin.

Ingredients
  

  • 1 cup(s) long-grain white rice
  • 2 cup(s) chicken broth
  • 1 tablespoon(s) olive oil
  • 2 cup(s) frozen vegetables
  • 1 cup(s) tomato sauce
  • 1 dash(es) salt, to taste
  • 1 dash(es) black pepper, to taste
  • 1/8 teaspoon(s) cumin

Instructions
 

  • Heat oil on medium in a large sauce pan.
  • Add the rice and toast slightly, turning it frequently, to make sure it doesn't burn.
  • Once it's started changing color and expanding, add the chicken broth, tomato sauce, and veggies.
  • Mix ingredients together, then add salt, black pepper, and cumin.
  • Reduce heat to medium low and cover sauce pan with aluminum foil or lid.
  • Let cook 20 minutes, stirring occasionally.
