
Filet Medallions
Served with a rich Bearnaise sauce this meal will delight your palate. The shrimp is a unique addition to this beef recipe.
Ingredients
- 1 butter, salted
- 2 egg, yolk, raw, fresh
- 1/4 lemon, juiced
- 1/2 teaspoon(s) sea salt
- 1 pinch(es) black pepper
- 2 drop(s) hot pepper sauce
- 8 4 oz filet medallions
- 4 shrimp, large
Instructions

To make Bearnaise, melt butter and bring to room temperature.

Making sure all ingredients are at room temperature, combine in a separate bowl egg yolks, lemon juice, salt, pepper and Tabasco.

While whisking, add melted butter in a thin stream.

Season filets and grill to desired temperature; at the same time saute or grill the shrimp.

Place filets on four plates and top each portion with one shrimp.

Drizzle Bearnaise on top and serve immediately.
