Filet Medallions

Served with a rich Bearnaise sauce this meal will delight your palate. The shrimp is a unique addition to this beef recipe.

Ingredients
  

  • 1 butter, salted
  • 2 egg, yolk, raw, fresh
  • 1/4 lemon, juiced
  • 1/2 teaspoon(s) sea salt
  • 1 pinch(es) black pepper
  • 2 drop(s) hot pepper sauce
  • 8 4 oz filet medallions
  • 4 shrimp, large

Instructions
 

  • To make Bearnaise, melt butter and bring to room temperature.
  • Making sure all ingredients are at room temperature, combine in a separate bowl egg yolks, lemon juice, salt, pepper and Tabasco.
  • While whisking, add melted butter in a thin stream.
  • Season filets and grill to desired temperature; at the same time saute or grill the shrimp.
  • Place filets on four plates and top each portion with one shrimp.
  • Drizzle Bearnaise on top and serve immediately.
