Southernized Asian Scallops

Ingredients

  

  • 2 tablespoon(s) vegetable oil
  • 5 large or Diver scallops
  • 2 eggs, slightly beaten
  • 1/2 yellow grits
  • 1 cucumber, peeled and seeded
  • 1 tablespoon(s) wasabi powder
  • 1/2 cup(s) mayonnaise

Instructions

 

  • Heat oil in saute pan.
  • Dip one side of scallop in egg, then in grits.
  • Coat well.
  • Place scallop, grit side down, in pan and saute until golden brown.
  • Turn scallop over and saute 30 seconds.
  • Drain on a rack.
  • To make sauce, combine cucumber, wasabi powder and mayonnaise in food processor until combined.
