Stuffed Zucchini

The fabulous filling makes this recipe perfect for using up all that late-summer garden zucchini. It works great as a one-dish meal or served with salad and bread.

Ingredients

  

  • 3 medium zucchini
  • 8 ounce(s) lean ground beef or ground turkey breast
  • 2 cup(s) cooked rice
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 4/25 teaspoon(s) allspice
  • 33/100 tablespoon(s) tomato paste
  • 1 cube chicken bouillon
  • 1 clove garlic
  • 24 floz water

Instructions

 

  • Cut zucchini in half and hollow out pulp.
  • Combine rice, ground beef, salt, allspice and black pepper.
  • Mix well.
  • Fill each zucchini with rice mixture.
  • In saucepan, bring 3 cups of water to boil, add chicken bouillon.
  • tomato paste and garlic clove.
  • Add stuffed zucchini to boiled water, cook for 10-15 minutes or when stuffed rice is well cooked.
  • Add grind dried mint leaf for garnish.
