Chickpea Curry

Looking for a side dish that can pull double duty as a main dish for vegetarian guests? This quick fix chick pea curry delivers a dose of Indian-inspired flavor that will please all of your guests.

Chickpea Curry


For 4 people

  • 3 cup(s) chick peas
  • 1 tablespoon(s) vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 tablespoon(s) curry powder
  • 1 teaspoon(s) ground ginger
  • 3 cup(s) tomato sauce
  • 1/2 lime, juiced


Chop onion and garlic and cook in oil. Add spices and cook until fragrant; add chick peas and tomato sauce, 1 1/2 c. water and bring to a boil. Reduce heat and simmer, stirring occasionally for 8 to 10 minutes. Stir in lime juice. Serve over rice with lowfat plain yogurt as garnish.
