Zucchini-Topped Pizza
Getting kids to eat their veggies can be a challenge, but we guarantee they'll love every bite of these mini pizzas topped with healthy zucchini. Squash those lunch and dinner dilemmas with this great meal.
Ingredients
- 1 zucchini
- 12 sticks mozzarella
- 8 small baked pizza crusts, 5-inch diameter
- 1 cup(s) pizza sauce
Instructions
- Cut the zucchini into 1-inch wide strips.
- Cut each strip crosswise into 1/2-inch pieces.
- Cut each cheese stick in half crosswise and then cut out a 1/2-inch square notch.
- Lay crusts slightly apart on 3 baking sheets, each 12x15 inch.
- Spread 2 tbsp of sauce evenly over each crust.
- Lay the cheese well apart on each crust and fit zucchini onto each.
- Bake in a 450 degrees oven until cheese just begins to melt, about 8 min.
