
Zucchini & Apple Salad
This sweet and delicious concoction is easily confused for a decadent dessert rather than a healthy treat. A unique alternative to sugary desserts, this one is sure to be the apple of your eye!
Ingredients
- 3 small zucchini
- 2 Red Delicious apples
- 1/2 cup(s) raisins
- 1/2 cup(s) chopped toasted walnuts
- 1/2 cup(s) vanilla yogurt
- 2 tablespoon(s) orange peel, grated (about 1/2 of orange)
- 1/2 teaspoon(s) granulated sugar
- 1/4 teaspoon(s) cayenne pepper
Instructions

Cut the zucchini into matchstick-size strips with a knife or mandolin.

Core the apples and dice into 1/2-inch pieces.
