Zingy Citrus Bars

These moist, crunchy, and fruity dessert bars are great for any occassion. And because there's no added sugar, you won't feel guilty making them for your kids!

Ingredients
  

  • 3 large eggs
  • 1/4 cup(s) butter, softened
  • 1 1/2 cup(s) unsweetened orange juice
  • 1/2 teaspoon(s) orange extract
  • 2 1/2 cup(s) whole wheat pastry flour
  • 1 teaspoon(s) baking soda
  • 2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) cinnamon
  • 1/2 teaspoon(s) nutmeg
  • 1/2 cup(s) fresh cranberries, chopped
  • 1 cup(s) walnuts, chopped
  • 3/4 cup(s) flaked coconut
  • 1 3/4 cup(s) crushed pineapple, drained well

Instructions
 

  • In a medium-large mixing bowl, beat together eggs, butter, orange juice, and orange extract.
  • Add flour, baking soda and baking powder and beat.
  • Add cinnamon and nutmeg and beat well.
  • Stir in cranberries and walnuts.
  • Spoon mixture into a greased and floured 9 x 13 inch baking pan and spread evenly.
  • Preheat oven to 350 degrees.
  • Drain the pineapple well.
  • Sprinkle coconut and pineapple over batter.
  • Bake for 35 to 45 minutes, or until a knife inserted comes out clean.
  • Cool and cut into bars.
  • Note: This recipe is marked "low sugar" as there is no added sugar to this dessert.
  • However, it does contain natural fruit sugars.
  • For added sweetness try adding 2 to 4 portion scoops of stevia when flour is added.
