Whole Grain Apple-Cranberry Muffins
Nothing can top a sweet, soft muffin for breakfast or even a snack. Bake up a batch of these for on-the-go goodness with plenty of apple a-peel.
Ingredients
- 3/4 cup(s) sweetened applesauce
- 33/100 cup(s) skim milk
- 2 tablespoon(s) vegetable oil
- 1 egg or 1/4 cup fat-free egg product
- 3 cup(s) Kashi GoLean Crunch, crushed
- 1 1/4 cup(s) all-purpose flour
- 1/2 cup(s) packed brown sugar
- 1 teaspoon(s) ground cinnamon
- 1 teaspoon(s) baking powder
- 3/4 teaspoon(s) baking soda
- 1/2 cup(s) sweetened dried cranberries
- 1 teaspoon(s) coarse sugar or granulated sugar (0.5 to 1 tsp)
Instructions

Heat oven to 400 degrees.

Place paper baking cup in each of 12 regular-size muffin cups; spray bottoms with cooking spray.

In large bowl, mix applesauce, milk, oil and egg until blended.

Stir in remaining ingredients except coarse sugar just until moistened.

Divide batter evenly among muffin cups.

Sprinkle with coarse sugar.

Bake 18 to 22 minutes or until golden brown.
