Veggie & Ham Pie
Yearning for some savory, juicy meat, accompanied by fresh vegetables? This veggie & ham pie will do the trick then. This is a perfect brunch meal. Serve with a salad and a loaf of good bread for a meal that will fill everyone's belly.
Ingredients
- 1/2 cup(s) chopped fresh broccoli
- 1/4 cup(s) chopped green pepper
- 1/4 cup(s) chopped fresh mushrooms
- 3 tablespoon(s) chopped onion
- 1 garlic clove, minced
- 2 teaspoon(s) vegetable oil
- 2 cup(s) chopped fully cooked ham, divided
- 1 1/2 cup(s) shredded Swiss cheese, divided
- 1 (9 inch) unbaked pastry shell
- 4 eggs, beaten
- 1 cup(s) light cream
Instructions
- In a saucepan, saut the broccoli, green pepper, mushrooms, onion and garlic in oil until tender.
- Sprinkle half of the ham and cheese into piecrust.
- Cover with the vegetables and the remaining ham and cheese.
- Combine eggs and cream; pour over ham and cheese.
- Bake at 350 degrees for 45-50 minutes or until knife inserted near the center comes out clean.
- If needed, cover edge of crust with foil to prevent excess browning.
- Ready in 1 hour.
