Tri-Colors Pasta Salad
Try colors, as in the tri-colors pasta salad. Filled with plenty of... everything, this recipe will become a staple on your menu.
Ingredients
- 1 1/4 cup(s) uncooked tri-color spiral pasta
- 1/4 cup(s) reduced sodium chicken broth or vegetable broth
- 3 tablespoon(s) red wine vinegar or cider vinegar
- 1 tablespoon(s) canola oil
- 1 garlic clove, minced
- 1 teaspoon(s) sugar
- 1 teaspoon(s) dried basil
- 1/2 teaspoon(s) salt
- 2 cup(s) broccoli florets
- 1 cup(s) halved cherry tomatoes
- 1 large sweet red pepper, julienned
- 1/4 cup(s) grated Parmesan cheese
Instructions
- Cook pasta according to package directions; rinse under cold water.
- Drain.
- In a large bowl, whisk together the broth, vinegar, oil, garlic, sugar, basil and salt.
- Add pasta, broccoli, tomatoes, pepper and Parmesan and toss to coat.
- Ready in 50 min.
