Tender Sun-Dried Tomatoes

Sun-dried tomatoes combined with parsley, chives, lemon juice, garlic, sour cream, salt and pepper make this a decadent dip. It goes great with tortillas, pita chips, French bread or fresh vegetables.

Ingredients
  

  • 10 sun-dried tomatoes, not oil packed
  • 8 tablespoon(s) loosely packed parsley, not chopped
  • 2 tablespoon(s) fresh chives
  • 2 teaspoon(s) lemon juice
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • 1 clove garlic, minced
  • 2 cup(s) sour cream

Instructions
 

  • Place tomatoes in small saucepan, barely cover with water, bring to a boil, and simmer until tender.
  • Drain any excess water.
  • Combine all ingredients in a blender.
