Sweet & Sour Cabbage
Find the nearest cabbage patch and pick up a red head! Then make up a batch of this sweet and sour cabbage. It’s chock full of great-tasting flavor and it’s the perfect fit for your healthy eating plan.
Ingredients
- 1 cooking oil spray
- 2 small Fuji apples, cored and chopped
- 1/4 cup(s) low-fat chicken broth
- 1 dash(es) salt
- 1 dash(es) freshly ground black pepper
- 1 sweet onion
- 1 tablespoon(s) red wine vinegar
- 4 cup(s) chopped red cabbage
- 2 tablespoon(s) red current jelly
Instructions

Saute onion in oil sprayed nonstick saucepan.

Add the apple and vinegar and season to taste with salt and pepper.

Add the cabbage and stir to mix well.

Cover and cook over medium heat for 10 minutes.

In a small bowl, mix together the chicken stock and jelly.

Stir into the cabbage.

Cover and cook until tender, about 10 minutes.

Salt and pepper to taste.
