Sweet Hearts of Palm Salad

You will have your sweetie's heart after serving this salad. Hearts of Palm are obtained from the Cabbage Palmetto plant, which is native to the Southeastern United States and the Caribbean. This tasty salad makes a great intro for a fish entree; serve it with a dry and chilled white wine.

Ingredients
  

  • 1 can of hearts of palm
  • 1 Spinach leaves, trimmed, washed and well dried
  • 6 tablespoon(s) vegetable oil
  • 3 tablespoon(s) fresh lemon juice
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) granulated sugar
  • 1/4 teaspoon(s) paprika
  • 1/2 teaspoon(s) aromatic bitters
  • 1 tablespoon(s) finely minced celery
  • 2 tablespoon(s) finely minced pimento-stuffed green olives
  • 2 tablespoon(s) finely minced scallions (with tops)
  • 1 tablespoon(s) Pimento for garnish

Instructions
 

  • Arrange hearts of palm, sliced lengthwise, on spinach leaves.
  • Combine remaining ingredients except garnish and pour over the salad.
  • Garnish with pimento.
