Super Nut Trout

Sometimes you feel like a nut... and when you do, this super nut trout is just what the chef ordered. Crusted in macadamia pieces, there's nothing average about this extraordinary fish dish.

Ingredients
  

  • 4 trouts, cleaned
  • 1/4 cup(s) all-purpose flour
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • 1/2 stick butter
  • 2 tablespoon(s) oil
  • 1/2 cup(s) unroasted macadamia pieces (heaping cup)
  • 2 tablespoon(s) freshly chopped parsley
  • 2 lemons, juice

Instructions
 

  • Dredge the trout in the flour seasoned with the salt and pepper.
  • Shake off any excess flour.
  • Heat the butter and oil together in a frying pan and cook the trout for about 7 minutes, turning once or twice.
  • Remove to a warm platter and add the nuts to the pan.
  • Cook until lightly toasted.
  • Add the parsley and lemon juice, and cook a minute more, slightly reducing the liquid to a glaze.
  • Pour on top of the fish and serve immediately.
  • Ready in 20 min.
