Stuffed Oysters

An elegant appetizer that can easily be double, tripled or increased even more for a party crowd.

Ingredients

  

  • 1 onion, sliced
  • 1/4 roasted red pepper, cut into strips
  • 1 handful fresh spinach, chopped
  • 2 slices prosciutto ham, cut into strips
  • 4 mushrooms, sliced
  • 2 teaspoon(s) garlic
  • 2 ounce(s) melted butter
  • 1 cup(s) Japanese breadcrumbs
  • 1/8 teaspoon(s) basil
  • 1/8 teaspoon(s) thyme
  • 1/8 teaspoon(s) oregano
  • 6 oysters on the half shell
  • 3 slices provolone cheese, halved

Instructions

 

  • Saute onions, peppers, spinach, ham and mushrooms in garlic butter.
  • Add breadcrumbs and spices.
  • Stuff mixture into oyster shells with oysters.
  • Place in 400-degree oven for 7 minutes.
  • Remove, top with provolone.
  • Bake an additional 1 1/2 minutes, until cheese melts.
  • Drizzle with garlic butter and serve.
