
Stuffed Flounder
Why flounder around with bland fish recipes, when you can enjoy this delicious entree? With breadcrumbs, chopped onions, bell pepper, crab meat and shrimp, this produces a one-of-a-kind taste?
Ingredients
- 6 (1/2 lb.) flounder
- 2 medium onions, chopped
- 3 ribs celery, chopped
- 1 bell pepper, chopped
- 2 eggs, beaten
- 3 teaspoon(s) lemon juice
- 1 1/2 cup(s) seasoned bread crumbs
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 1/8 teaspoon(s) Tabasco sauce
- 1/8 teaspoon(s) cayenne pepper
- 16 ounce(s) lump crab meat
- 8 ounce(s) can shrimp
- 1 pat of butter
Instructions
- Cut flounder down the middle.
- Take knife and cut around inside under skin to make a pocket on each side of the slit.
- Saut onions, celery and bell pepper until tender.
- Mix eggs, lemon juice and bread crumbs.
- Add salt, pepper, Tabasco and cayenne.
- Check crab meat for shells and add.
- Drain shrimp and add.
- Stuff flounder with crab and shrimp mixture.
- Bake 1 hour at 350 degrees, basting with butter.
- Watch carefully.
- Ready in 1 hour.
