Steak Tartare

Ingredients
  

  • 4 ounce(s) filet mignon
  • 1 anchovy fillets
  • 33/100 tablespoon(s) chopped onion
  • 1/2 teaspoon(s) chopped fresh garlic
  • 2/25 tablespoon(s) capers
  • 1 whole egg yolk
  • 3 teaspoon(s) dijon mustard
  • 1 tablespoon(s) dry demi-glaze
  • 1/16 teaspoon(s) salt
  • 1/16 teaspoon(s) pepper
  • 2 tablespoon(s) red wine vinegar
  • 1 tablespoon(s) Chopped parsley

Instructions
 

  • Finely chop the filet and anchovy.
  • Incorporate the onion, garlic and capers with the meat and place in mixing bowl.
  • Add egg yolk, Dijon, dry demi, salt and pepper.
  • Mix thoroughly.
  • Last, add the vinegar.
  • Roll mix, then place onto chilled salad plate.
  • Shape into one round 5-oz patty.
  • Finish with chopped parsley and serve with toast points.
