
Shrimp Linguine
We've got a dish that's oodles of noodles... and shrimp... and tomatoes... and more. There's absolutely nothing fishy about this palate-pleasing pasta dish that will leave you feeling fulfilled.
Ingredients
- 4 ounce(s) linguine
- 1 tablespoon(s) vegetable oil
- 1 large clove garlic, minced
- 2 tablespoon(s) shallots, finely chopped
- 2 large tomatoes, coarsely chopped
- 1/4 teaspoon(s) dried basil
- 4 ounce(s) small shrimp cooked
- 2 green onions, chopped
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) pepper, to taste
Instructions
- In a large pot of boiling water; cook linguine until tender but firm; drain.
- Meanwhile, in heavy skillet, heat oil over high heat.
- Add garlic and shallots; cook, stirring for about 30 seconds.
- Add tomatoes and basil; cook stirring, for about 1 minute.
- Add shrimp and cook until shrimp are hot.
- Sprinkle with green onions and season with salt and pepper and spoon over hot linguine.
