Shrimp Linguine

Ingredients
  

  • 4 ounce(s) linguine
  • 1 tablespoon(s) vegetable oil
  • 1 large clove garlic, minced
  • 2 tablespoon(s) shallots, finely chopped
  • 2 large tomatoes, coarsely chopped
  • 1/4 teaspoon(s) dried basil
  • 4 ounce(s) small shrimp cooked
  • 2 green onions, chopped
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste

Instructions
 

  • In a large pot of boiling water; cook linguine until tender but firm; drain.
  • Meanwhile, in heavy skillet, heat oil over high heat.
  • Add garlic and shallots; cook, stirring for about 30 seconds.
  • Add tomatoes and basil; cook stirring, for about 1 minute.
  • Add shrimp and cook until shrimp are hot.
  • Sprinkle with green onions and season with salt and pepper and spoon over hot linguine.
