Seared Scallops with Summer Succotash

Ingredients
- 4 ounce(s) raw diced bacon
- 2 cup(s) diced red onion
- 2 cup(s) yellow corn
- 16 ounce(s) lima beans
- 1 cup(s) chicken stock
- 1 teaspoon(s) garlic
- 2 tablespoon(s) butter
- 2 cup(s) okra, sliced
- 4 tablespoon(s) heavy cream
- 2 tablespoon(s) Parmesan cheese
- 1/8 cup(s) diced tomato
- 2 tablespoon(s) green scallion
- 32 ounce(s) large scallops
Instructions
- Begin sauteing bacon.
- Add onion, corn and lima beans and saute until bacon is cooked.
- Add chicken stock; simmer 15 minutes.
- Correct seasoning with salt and pepper.
- Drain liquid; add chopped garlic and butter and saute.
- Add okra; saute.
- Add heavy cream and Parmesan; reduce to desired consistency.
- Finish with diced tomatoes and scallions.
- Sear scallops in hot seasoned pan.
- Serve scallops on top of succotash.
