Seafood Sausage

It may sound a bit bizarre, but there's nothing fishy about this seafood sausage. Swimming in goodness, it's white fish, salmon and shrimp all rolled into one.

Ingredients
  

  • 5 3/10 ounce(s) white fish
  • 5 3/10 ounce(s) salmon
  • 5 3/10 ounce(s) shrimp
  • 1/2 teaspoon(s) salt
  • 83/1000 ounce(s) fennel seeds
  • 2 egg whites
  • 1/3 teaspoon(s) white pepper
  • 1 Juice from 1 lemon
  • 1/16 teaspoon(s) parsley
  • 1/16 teaspoon(s) paprika

Instructions
 

  • Combine all ingredients in food processor.
  • Chop until coarse.
  • Do not over-chop.
  • Lay out one 14-inch long strip of plastic wrap.
  • Spoon out sausage lengthwise on film.
  • Roll into log 1 inch thick.
  • Tie up log on ends and tie every 6 inches.
  • Submerge sausage, still in the plastic wrap, in boiling water.
  • Cook 1-5 minutes.
  • Cool, unwrap and serve.
