Sauteed Sea Scallops
The sea is calling your dinner plate! The sweetness of corn is a perfect complement to the delicate flavor of scallops. Wonderful and from the water.
Ingredients
- 3 cup(s) fresh corn
- 1 dash(es) salt, to taste
- 1 teaspoon(s) sugar
- 8 tablespoon(s) heavy cream
- 1 teaspoon(s) Cayenne pepper
- 12 slices bacon
- 12 large scallops
Instructions
- Simmer corn in water with a little salt and sugar until tender.
- Drain, saving the liquid, and puree corn in food processor.
- Add a little corn liquid to puree if needed.
- Add heavy cream.
- Put in saucepan over medium heat, stirring constantly, until thickened.
- Correct seasoning with salt, sugar and cayenne.
- Fry bacon and saute scallops.
- Put corn sauce on plate and top with bacon, then scallops.
