Ingredients
  

  • 1 1/4 cup(s) long grain rice
  • 1 finely chopped onion
  • 1 leek, sliced
  • 2 tablespoon(s) butter
  • 1 water
  • 1 stock cube
  • 1 Coarsely ground pepper
  • 1 Salt
  • 1 Dried herbs of your choice
  • 1/2 pound(s) frozen mixed vegetables, thawed
  • 1/2 cup(s) smoked ham, shredded
  • 1 1/4 cup(s) strong, grated cheese, like Parmesan

Instructions
 

  • Saute onion and rice; add water, stock cube and pepper.
  • Boil the rice according to package instructions.
  • Add vegetables when 5 minutes remain of the cooking time.
  • Shred the ham, fold it into the rice, flavor with herbs and serve with grated cheese and a fresh salad.
  • Ready in 40 min.
