
Risotto with Ham & Veggies
Take those boring old rice dishes with a grain of salt. Try this creamy, dreamy risotto that is sure to please the palates of the pickiest eaters. We promise a little will go a long way in satisfying your family and friends.
Ingredients
- 1 1/4 cup(s) long grain rice
- 1 finely chopped onion
- 1 leek, sliced
- 2 tablespoon(s) butter
- 1 water
- 1 stock cube
- 1 Coarsely ground pepper
- 1 Salt
- 1 Dried herbs of your choice
- 1/2 pound(s) frozen mixed vegetables, thawed
- 1/2 cup(s) smoked ham, shredded
- 1 1/4 cup(s) strong, grated cheese, like Parmesan
Instructions
- Saute onion and rice; add water, stock cube and pepper.
- Boil the rice according to package instructions.
- Add vegetables when 5 minutes remain of the cooking time.
- Shred the ham, fold it into the rice, flavor with herbs and serve with grated cheese and a fresh salad.
- Ready in 40 min.
