Red Bell Pepper Tortellini

This is great with other fresh vegetables like zucchini or squash too. It makes for a wonderful quick meal.

Ingredients
  

  • 1 1/8 cup(s) cheese tortellini
  • 1/2 cup(s) red bell pepper, diced
  • 3 cloves garlic, minced
  • 1/2 cup(s) butter
  • 32 tablespoon(s) heavy whipping cream
  • 1/4 cup(s) ground walnuts
  • 2 teaspoon(s) dried basil
  • 1 tablespoon(s) thinly sliced green onion

Instructions
 

  • Prepare tortellini according to package directions.
  • Meanwhile, in a skillet, saute red pepper and garlic in butter until pepper is crisp and tender.
  • Stir in cream and cook for 8 to 10 minutes or until slightly thickened.
  • Add walnuts, basil and onion and heat through.
  • Drain tortellini, add to sauce and toss to coat.
