Red Bell Pepper Tortellini
This is great with other fresh vegetables like zucchini or squash too. It makes for a wonderful quick meal.
Ingredients
- 1 1/8 cup(s) cheese tortellini
- 1/2 cup(s) red bell pepper, diced
- 3 cloves garlic, minced
- 1/2 cup(s) butter
- 32 tablespoon(s) heavy whipping cream
- 1/4 cup(s) ground walnuts
- 2 teaspoon(s) dried basil
- 1 tablespoon(s) thinly sliced green onion
Instructions
- Prepare tortellini according to package directions.
- Meanwhile, in a skillet, saute red pepper and garlic in butter until pepper is crisp and tender.
- Stir in cream and cook for 8 to 10 minutes or until slightly thickened.
- Add walnuts, basil and onion and heat through.
- Drain tortellini, add to sauce and toss to coat.
