Pineapple Chunks
Sweet, carmelized pineapple casserole with a buttery Ritz cracker topping is a simple, decadent dessert that you can whip up in minutes when unexpected company stops by. These pantry staple ingredients come together to make a delicious dessert with a hint of the tropics.
Ingredients
- 5 cup(s) pineapple chunks
- 1 cup(s) sugar
- 1/2 cup(s) flour
- 105 Ritz crackers (1.5 packages)
- 1 1/2 sticks butter, melted
Instructions
- Preheat oven to 350 degrees.
- Grease a medium size casserole dish with butter.
- Drain both cans of pineapple chunks.
- Reserve juice from pineapples and set juice aside.
- Place pineapple chunks in bottom of prepared 9 x 13-inch casserole dish.
- In a bowl, combine sugar, flour and reserved pineapple juice.
- Pour over pineapple chunks in casserole dish.
- Crumble the crackers in a separate bowl, and pour melted butter over crackers and mix well.
- Spread crackers over pineapple mixture in casserole, and place in preheated 350 degree oven for 30 minutes, or until juice starts to boil.
