Peanut Hummus

It's a tempting twist on this traditional Middle Eastern dip. You'll go nuts over this hummus recipe that's made from boiled peanuts. It's one shell of a treat for your tastebuds.

Ingredients
  

  • 1 cup(s) shelled boiled peanuts
  • 2 tablespoon(s) tahini
  • 1 floz fresh squeezed lemon juice
  • 1 tablespoon(s) chopped fresh parsley
  • 1 teaspoon(s) minced fresh garlic
  • 1/4 teaspoon(s) ground cumin
  • 1/50 tablespoon(s) ground red pepper
  • 2 tablespoon(s) olive oil

Instructions
 

  • Process first 7 ingredients in a food processor until coarsely chopped, stopping to scrape down sides.
  • With processor running, pour olive oil through food chute in a slow, steady stream, processing until mixture is smooth.
  • Stir in up to 5 tbsp water, 1 tbsp at a time, for desired spreading consistency.
  • Garnish, if desired.
  • Serve with pita rounds or pita chips.
  • Ready in 25 min.
