Ingredients

  

  • 1 cup(s) unseasoned breadcrumbs
  • 1 cup(s) shredded Parmesan
  • 1 cup(s) Japanese breadcrumbs
  • 4 tablespoon(s) finely chopped chives
  • 2 tablespoon(s) dried dill weed
  • 4 tablespoon(s) chopped fresh basil
  • 2 eggs
  • 1/2 cup(s) milk
  • 6 6-oz. sea bass filets
  • 1 cup(s) flour
  • 1 tablespoon(s) olive oil

Instructions

 

  • Mix first six ingredients.
  • Whisk together eggs and milk.
  • Dredge fish in flour; dip in egg wash; then press firmly, on both sides, into Parmesan mixture.
  • Heat olive oil in non-stick saute pan.
  • Brown fish on both sides; finish in a 350-degree oven if necessary.
