Orange Chicken Florentine

Life is but a cream when you've got this orange chicken Florentine on the menu. We predict this will become a family favorite, because it's easy to make and even easier to devour.

Ingredients
  

  • 1 Juice from 1 orange
  • 1 cup(s) heavy cream
  • 1 dash(es) Garlic powder
  • 1 dash(es) Salt
  • 1 dash(es) pepper
  • 1 Dry white wine
  • 2 small chicken breast filets, split and pounded thin
  • 2 ounce(s) cooked spinach, seasoned with salt, pepper, garlic and butter
  • 2 pieces prosciutto ham
  • 2 pieces provolone cheese
  • 1 Egg wash
  • 1 Flour
  • 6 mushrooms, sliced
  • 1/2 cup(s) pine nuts
  • 2 slices mozzarella cheese

Instructions
 

  • Mix orange juice, cream garlic powder, salt, pepper and wine; reduce until medium-thick sauce consistency.
  • Wrap chicken around spinach, ham and provolone.
  • Dip roll in egg wash, then flour.
  • Saute in pan, in oil, until chicken is just done.
  • Place roll in baking dish and top with mushrooms, pine nuts, orange sauce and mozzarella.
  • Bake for 10 to 20 minutes at 400 degrees, until spinach is hot and cheese melts.
