Miso Seared Tuna

Ingredients
  

  • 4 ounce(s) sushi grade tuna filet
  • 1/2 tablespoon(s) seven pepper blend
  • 2 floz sake
  • 4 tablespoon(s) mirin (rice wine)
  • 8 tablespoon(s) white miso paste (bean paste)
  • 1/4 cup(s) granulated sugar

Instructions
 

  • Bring sake and mirin to a boil in a medium saucepan over high heat.
  • Boil 20 seconds to evaporate alcohol.
  • Turn heat down to low; add miso paste and mix in with wooden spoon.
  • When miso is dissolved, turn heat up to high; add sugar.
  • Stir so sugar does not stick to pan.
  • Cool to room temperature.
  • Coat tuna filet with pepper blend and sear to desired temperature.
  • To serve, slice tuna into six pieces and spread in a fan.
  • Drizzle sauce over one end of the tuna slices.
