Mini Tarts
There is nothing about this dessert that is small. It has all the tastes of a tart, but is shaped like a muffin. These cute little cup-filled joys are filled with sugar, raisins, butter, milk and more for a satisfying sweet treat.
Ingredients
- 1 1/2 cup(s) raisins
- 3/4 cup(s) white sugar
- 1/2 cup(s) butter, cut into pieces
- 2 eggs
- 1/2 cup(s) milk
- 1 teaspoon(s) vanilla extract
- 1 1/2 cup(s) all-purpose flour
- 2 teaspoon(s) baking powder
- 1 teaspoon(s) baking soda
- 1 dash(es) salt
- 1/2 cup(s) walnuts, chopped
- 1/4 cup(s) corn syrup
Instructions
- Place raisins, sugar, butter, slightly beaten eggs, milk, and vanilla in a large heavy-bottomed saucepan and cook over medium heat, stirring frequently, until mixture is hot, slightly thickened, and just beginning to bubble.
- Cool slightly, uncovered, in the refrigerator.
- Stir flour with baking powder, baking soda, and salt in a large mixing bowl.
- Make a well in center, and pour in warm raisin mixture; stir just until combined.
- Stir in nuts until evenly mixed.
- Spoon batter into greased muffin cups.
- Bake in center of oven at 350 degrees until golden, about 15 to 17 minutes.
- Remove from oven, and immediately pour about 1 tbs syrup over each tart.
- Cool tarts in pan for 10 minutes, then remove to a rack and serve warm.
