Mini Tarts

There is nothing about this dessert that is small. It has all the tastes of a tart, but is shaped like a muffin. These cute little cup-filled joys are filled with sugar, raisins, butter, milk and more for a satisfying sweet treat.

Ingredients
  

  • 1 1/2 cup(s) raisins
  • 3/4 cup(s) white sugar
  • 1/2 cup(s) butter, cut into pieces
  • 2 eggs
  • 1/2 cup(s) milk
  • 1 teaspoon(s) vanilla extract
  • 1 1/2 cup(s) all-purpose flour
  • 2 teaspoon(s) baking powder
  • 1 teaspoon(s) baking soda
  • 1 dash(es) salt
  • 1/2 cup(s) walnuts, chopped
  • 1/4 cup(s) corn syrup

Instructions
 

  • Place raisins, sugar, butter, slightly beaten eggs, milk, and vanilla in a large heavy-bottomed saucepan and cook over medium heat, stirring frequently, until mixture is hot, slightly thickened, and just beginning to bubble.
  • Cool slightly, uncovered, in the refrigerator.
  • Stir flour with baking powder, baking soda, and salt in a large mixing bowl.
  • Make a well in center, and pour in warm raisin mixture; stir just until combined.
  • Stir in nuts until evenly mixed.
  • Spoon batter into greased muffin cups.
  • Bake in center of oven at 350 degrees until golden, about 15 to 17 minutes.
  • Remove from oven, and immediately pour about 1 tbs syrup over each tart.
  • Cool tarts in pan for 10 minutes, then remove to a rack and serve warm.
