Middle-Eastern Squash Sauce
This is the perfect way to sneak squash into your kid's diet. Simply disguise it in this Middle Eastern sauce and serve it over rice or pasta. They'll never know the difference.
Ingredients
- 1 med squash, cooked
- 2 tablespoon(s) butter
- 2 tablespoon(s) olive oil
- 1/2 teaspoon(s) ground cardamom
- 3/4 teaspoon(s) ground coriander
- 1/8 teaspoon(s) ground ginger
- 1/8 teaspoon(s) allspice
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) white pepper, to taste
- 1/2 cup(s) toasted slivered almonds
- 1 Zest of orange
Instructions
- In a large skillet over medium heat, heat butter and oil then stir in spices, except salt and pepper.
- Cook for about a minute.
- Stir in squash and saute until well coated, adding white pepper and salt to taste.
- Remove to serving dish.
- Sprinkle with toasted almonds and orange zest just before serving.
- Ready in 25 min.
