
Mexican Stew
Stew over this stout soup. Chock-full of Mexican flavors such as onion, cilantro, hominy and tomatoes, this soup goes great with rice or your favorite bread. We promise you will love every spoonful.
Ingredients
- 32 ounce(s) lean beef, cubed
- 1 tablespoon(s) olive oil
- 1 large onion, chopped
- 1 clove garlic, finely chopped
- 1/4 teaspoon(s) salt
- 1/8 teaspoon(s) pepper
- 1/4 cup(s) cilantro
- 2 cup(s) stewed tomatoes
- 4 tablespoon(s) tomato paste
- 2 1/2 cup(s) can (1 lb. 13 oz.) hominy
Instructions

In large pot, heat oil, then saute beef.

Add onion, garlic, salt, pepper, cilantro, and enough water to cover meat.

Cover pot and cook over low heat until meat is tender.

Add tomatoes and tomato paste.

Continue cooking for about 20 minutes.

Add hominy and continue cooking over low heat for another 15 minutes, stirring occasionally.

If too thick, add water for desired consistency.
