Meringue with Strawberry

When most people think of meringue, lemon usually comes to mind. But here is a sweet twist on that classic. Strawberry meringue and it is every bit as good. It's traditional meringue topped with strawberries and ice cream. It will become a new classic.

Ingredients
  

  • 8 egg whites
  • 1 1/2 cup(s) sugar
  • 1/4 teaspoon(s) salt
  • 1 teaspoon(s) vanilla
  • 2 cup(s) strawberries, sliced
  • 1 vanilla ice cream

Instructions
 

  • Place the egg whites and salt in the mixer's bowl.
  • Whip until it begins to thicken.
  • With the mixer running, slowly add the sugar and vanilla.
  • Beat until firm.
  • Pre-heat the oven to 250 degrees.
  • Cover a cookie sheet with baker's parchment paper and place mounds of approximately two tbsp of the mixture a few inches apart.
  • Cook for about one hour and cool.
  • Use immediately or store, covered, at room temperature.
  • Top with ice cream and sliced strawberries.
