
Meringue with Strawberry
When most people think of meringue, lemon usually comes to mind. But here is a sweet twist on that classic. Strawberry meringue and it is every bit as good. It's traditional meringue topped with strawberries and ice cream. It will become a new classic.
Ingredients
- 8 egg whites
- 1 1/2 cup(s) sugar
- 1/4 teaspoon(s) salt
- 1 teaspoon(s) vanilla
- 2 cup(s) strawberries, sliced
- 1 vanilla ice cream
Instructions
- Place the egg whites and salt in the mixer's bowl.
- Whip until it begins to thicken.
- With the mixer running, slowly add the sugar and vanilla.
- Beat until firm.
- Pre-heat the oven to 250 degrees.
- Cover a cookie sheet with baker's parchment paper and place mounds of approximately two tbsp of the mixture a few inches apart.
- Cook for about one hour and cool.
- Use immediately or store, covered, at room temperature.
- Top with ice cream and sliced strawberries.
