
Melt-in-Your-Mouth Buttermilk Pancakes
It's pancake perfection for breakfast! There's nothing better than waking up to these pancakes on a Sunday morning. They are super light and fluffy. The buttermilk adds just the right amount of richness.
Ingredients
- 1/4 cup(s) all purpose flour
- 1 teaspoon(s) baking powder
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) baking soda
- 1 1/2 cup(s) buttermilk
- 2 large eggs, lightly beaten
- 2 tablespoon(s) honey
- 1 cooking spray
- 1/2 tablespoon(s) Maple syrup for accompaniment
- 1/3 cup(s) Fresh berries for accompaniment
Instructions
- Grease griddle or skillet with cooking spray.
- Combine all-purpose flour, baking powder, salt and baking soda in a large bowl.
- Combine buttermilk, eggs and honey in a medium bowl.
- Add buttermilk mixture to flour mixture; stir until blended but still lumpy.
- Heat prepared griddle over medium heat until hot.
- Pour about 1/3 cup batter onto griddle.
- Cook for 2 to 3 minutes on each side or until golden brown.
- Repeat with remaining batter.
- Serve with maple syrup or your favorite jam.
