Melt-in-Your-Mouth Buttermilk Pancakes

It's pancake perfection for breakfast! There's nothing better than waking up to these pancakes on a Sunday morning. They are super light and fluffy. The buttermilk adds just the right amount of richness.

Ingredients
  

  • 1/4 cup(s) all purpose flour
  • 1 teaspoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) baking soda
  • 1 1/2 cup(s) buttermilk
  • 2 large eggs, lightly beaten
  • 2 tablespoon(s) honey
  • 1 cooking spray
  • 1/2 tablespoon(s) Maple syrup for accompaniment
  • 1/3 cup(s) Fresh berries for accompaniment

Instructions
 

  • Grease griddle or skillet with cooking spray.
  • Combine all-purpose flour, baking powder, salt and baking soda in a large bowl.
  • Combine buttermilk, eggs and honey in a medium bowl.
  • Add buttermilk mixture to flour mixture; stir until blended but still lumpy.
  • Heat prepared griddle over medium heat until hot.
  • Pour about 1/3 cup batter onto griddle.
  • Cook for 2 to 3 minutes on each side or until golden brown.
  • Repeat with remaining batter.
  • Serve with maple syrup or your favorite jam.
