
Mediterranean Chicken
You’ll want to chicken out when this delicious poultry dish crosses your path. It’s sauteed chicken in a creamy sauce with artichokes, mushrooms and sherry! Garnish with parsley and chives for additional flavor. Talk about a feather in your culinary cap.
Ingredients
- 32 ounce(s) chicken pieces
- 1 cup(s) flour
- 4 ounce(s) butter
- 1 dash(es) salt
- 1 dash(es) pepper
- 1/8 teaspoon(s) nutmeg
- 1 cup(s) small mushrooms
- 6 cooked artichoke hearts
- 4 floz cream sherry
- 1 cup(s) half and half
- 1/4 teaspoon(s) minced parsley
- 1/4 teaspoon(s) minced chives
Instructions

Dredge chicken in flour.

Melt butter in large skillet.

Add chicken and saute until lightly browned.

Season to taste with salt, pepper and nutmeg.

Wash mushrooms and pat dry.

Add to chicken along with artichoke hearts.

Pour sherry over all; cover, then simmer for 15 minutes, or until chicken is tender and most of the wine has evaporated.

Stir in half-and-half.

Add more cream if needed to thin sauce to desired consistency.
