Low-Sugar Florentines & Berry Ice Cream

Sometimes a low-sugar, rich dessert is all we need to keep on going! This is especially good come summertime when you’re searching for a way to cool off. It’s “berry” delicious!

Ingredients

  

  • 1/4 cup(s) muesli, toasted
  • 1/4 cup(s) bran flakes
  • 1/4 cup(s) sultanas
  • 1/8 cup(s) dried apricots, finely chopped
  • 1/16 cup(s) glace cherries, finely chopped
  • 93/1000 cup(s) sliced almonds, toasted
  • 1/4 cup(s) condensed milk, light
  • 1 tablespoon(s) golden syrup
  • 16 ounce(s) ice cream, low fat berry

Instructions

 

  • Preheat oven to 350 degrees.
  • Grease 2 oven trays and line each with baking paper.
  • Combine all ingredients except the ice cream in a medium bowl.
  • Drop tbsp of the mixture onto the oven trays about 3 inches apart, spread into rounds.
  • Bake for about 10 minutes or until Florentines are lightly browned, cool on trays.
  • Serve 1 1/2 Florentines with 2 scoops of ice cream.
  • Ready in 25 min.
