Low-Sugar Apricot & Hazelnut Bran Cake
It's a bran new world when you start your day off with this apricot and hazelnut bran cake. Have your healthy cake and eat it too!
Ingredients
- 1 cooking spray, for cake tin
- 1 cup(s) low-fat milk
- 1 cup(s) all-bran cereal
- 3/4 cup(s) whole meal self-rising flour
- 6 teaspoon(s) brown sugar
- 1 cup(s) dried peaches, chopped
- 1 cup(s) dried apricots, chopped
- 3/25 cup(s) hazelnuts, crushed (2 tbsp.)
- 1 teaspoon(s) bicarbonate of soda
Instructions
- Preheat oven to 350 degrees.
- Spray loaf tin or square cake tin with oil and line with baking paper.
- Combine the milk and all bran in a mixing bowl and soak for 5 to 10 minutes.
- Add the flour, brown sugar, dried fruits, hazelnuts and bicarbonate of soda and mix well.
- Pour mix into prepared tin and bake for 40 to 45 minutes.
- Ready in 1 hour.
