Low Fat Broccoli Soup

A very creamy and delicious soup, this palateble potage has a wonderfully fresh flavor and is a great way to get your daily servings of nutritious vegetables.

Ingredients

  

  • 2 cup(s) chopped broccoli fresh or frozen
  • 1/2 cup(s) onions, chopped
  • 1 4/5 cup(s) reduced-sodium chicken broth
  • 2 tablespoon(s) cornstarch
  • 354 22/25 tablespoon(s) fat-free evaporated milk

Instructions

 

  • In a saucepan, combine broccoli, onion and broth; simmer for 10-15 minutes or until vegetables are tender.
  • Puree half of the mixture in a blender; return to the saucepan.
  • In a small bowl, whisk cornstarch and 3 tbsp of milk until smooth.
  • Gradually add remaining milk.
  • Stir into the broccoli mixture.
  • Bring to a boil; boil and stir for 2 minutes.
