
Low Cholesterol Beef in Zucchini Grate
When it comes to choosing a vegetable, zucchini is such a versatile vegetable you can combine it with almost anything. This beefy dish makes the zucchini savory and flavorful.
Ingredients
- 2 large zucchini
- 1 large onions, chopped
- 1 clove garlic, diced
- 4 tomatoes, peeled and chopped
- 1 green pepper, chopped
- 10 ounce(s) ground sirloin
- 1 1/2 ounce(s) breadcrumbs
- 1 1/2 ounce(s) Parmesan cheese, shredded
Instructions

Simmer zucchini in boiling salted water about 12 minutes.

Cut lengthwise, scoop out pulp and chop.

Saut meat and onions until onions are translucent and meat is cooked through.

Drain.

Mix meat with zucchini, tomatoes, pepper, garlic, salt and pepper to taste.

Pile mixture into zucchini halves and place on baking sheet.

Top with breadcrumbs and grated cheese.

Bake in 375 degrees oven approximately 15 minutes.
