Lemon Chicken
This slow-roasted chicken gets infused with lemon flavor that makes it bright and fragrant. For more wow, add in some sprigs of rosemary or some fresh thyme.
Ingredients
- 1 whole chicken
- 1 tablespoon(s) olive oil for browning
- 1 salt and pepper
- 2 lemons
- 16 ounce(s) water
Instructions
- Wash chicken, then salt and pepper it all over, inside and out.
- In a Dutch oven, brown the chicken all over.
- Place chicken in slow cooker, butt end up.
- Cut lemons in fourths (rind and all) and place the lemon pieces inside the chicken.
- Add water to the pot.
- Turn your slow cooker on high for 2-3 hours, then turn it down to medium for the rest of the day for the meat to get good and done and be tender and juicy.
- Before serving, remove the lemons.
