Leek & Potato Soup

You say potato, we say leek and potato!  Here's  an incredible soup that's certain to please even the pickiest dinner guest. This leek and potato soup will bowl you over.

Ingredients
  

  • 16 ounce(s) potatoes, peeled and chopped into 2 inch chunks
  • 3 leeks, (1 lb.) trimmed and all the white part and some of the green sliced into 2 inch slices
  • 1 medium onion, chunked
  • 2 ounce(s) butter
  • 8 floz water
  • 12 floz vegetable stock or chicken stock
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 2 tablespoon(s) fresh chives for garnish

Instructions
 

  • Put potatoes, leeks, onion, butter and the half-pint of water in a large microwaveable bowl.
  • Cover and microwave on high for 20 minutes.
  • Have the hot stock ready and add to the cooked vegetables.
  • Cook for a further 5 minutes, and then add salt and pepper to taste.
  • Blend till smooth in blender.
  • Ready in 45 min.
